what is it called in allotments when u leave the weeds to provide a good eco system for an organic garden?

You don’t leave weeds,but you grow "green manure" all over the plot.It’s just dug straight in for instant manure when you need it

I know in normal grain farming we call a field "fallow" if it is left to grow naturally for a couple of years.

Allowing the ground to lay fallow.
Fallow, adjective – (of land) plowed and left unseeded for a season or more; uncultivated.*
